Granola cups with fruit

It's always practical to have a supply of homemade granola to hand. These granola cups are made with almost the exact same recipe as crunchy muesli. Baking the granola cups in a muffin tin gives them an unusual shape and will make them an eye-catching addition at any brunch. The cups can be garnished with fruit, berries, nuts or compote depending on the season and your own personal preferences.

Ingredients

for 12 pieces

Granola
250 g fine whole-grain rolled oats
2 tbsp sunflower seeds, finely chopped
1 tsp cinnamon
2 pinch salt
80 g liquid honey
70 g coconut oil, melted
Filling
180 g plain yoghurt
½  apple, thinly sliced
½  pear, thinly sliced
kiwi, cut into slices
1 tbsp liquid honey
1 tbsp hazelnut, finely chopped

How it's done

Granola

In a bowl, mix the oats with all the other ingredients up to and including the coconut oil. Spread the mixture in the prepared tin, press down the base and edges with the back of a spoon.

To bake

Approx. 10 mins. in the centre of an oven preheated to 180°C. Remove and leave to cool in the tin.

Filling

Remove the granola cups from the muffin tin, fill the cups with yoghurt, top with fruit, drizzle with honey, sprinkle with nuts.
