How it's done
Light yeast dough
Mix the flour, salt, sugar and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
Light rice yeast dough
Mix the flours, salt, sugar and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
Light brown yeast dough
Mix the flour, salt, sugar, cocoa powder and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
Medium-brown yeast dough
Mix the flour, salt, sugar, cocoa powder and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
Brown dough
Mix the flour, salt, sugar, cocoa powder and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
Dark brown dough
Mix the flour, salt, sugar, cocoa powder and yeast in a bowl. Add the butter and milk, mix and knead for approx. 5 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hrs. until doubled in size.
To shape
Shape each piece of dough into a roll and make into a little man. Use sultanas for the eyes. Transfer the little bread men to two baking trays lined with baking paper, leave to rise for a further 15 mins. Brush with a little milk.
To bake
Approx. 25 mins. in an oven preheated to 180 °C (convection). Remove from the oven and leave to cool on a rack.
