Lye bread men
Ingredients
for 4 pieces
| 500 g | white flour |
| 1 ½ tsp | salt |
| 2 tsp | sugar |
| ¼ cube | yeast (approx. 10 g, crumbled |
| 2 ½ dl | water |
| 100 g | butter, cut into pieces, soft |
| sunflower seeds |
| ½ dl | water, boiling |
| 3 tsp | sodium bicarbonate |
| ½ tbsp | dried rosemary |
| 1 tsp | pepper |
| 1 tsp | sea salt |
How it's done
Dough
Mix the flour, salt, sugar and yeast in a bowl. Add the water and butter, knead for approx. 10 mins. to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 1½ hrs. until doubled in size.
To shape
Cut the dough into 4 pieces, shape each piece into a roll, cut off approx. ¼ for the head. Cut into the lower ⅓ of the roll to make the legs. Cut into the upper ⅓ at the sides to make the arms. Shape the head into an oval ball and place on top of the body. Press in sunflower seeds for the eyes and buttons. Transfer the bread men to a baking tray lined with baking paper, leave to rise for a further 15 mins.
To glaze
Mix the boiling water and baking soda until the baking soda has completely dissolved. Mix the rosemary and pepper. Brush the bread men all over with the soda water, decorate with the rosemary mixture, season with salt.
To bake
Approx. 30 mins. in the lower half of an oven preheated to 180°C. Remove from the oven, leave to cool completely on a rack.
