Smoked ham with apricot sauce and dried beans
Ingredients
for 4 person
| 1 | smoked ham (approx. 1 kg) |
| 3 litre | water, boiling |
| 100 g | dried beans |
| 1 sprig | thyme |
| 1 tbsp | butter |
| 1 | onion, finely chopped |
| ¾ tsp | salt |
| a little | pepper |
| 1 ½ tbsp | soft dried apricots, finely chopped |
| 3 tbsp | coarse-grain mustard |
| 2 tsp | Dijon mustard |
| 2 tbsp | sour single cream |
| 2 tsp | liquid honey |
| salt and pepper to taste |
How it's done
Smoked ham
Cook the ham in a bag in simmering water for approx. 1 hr.
Dried beans
Empty the beans into a pan, cover with water, add the thyme, bring to the boil, reduce the heat, cover and simmer for approx. 30 mins. until just soft. Set aside approx. 100 ml of cooking water, drain the beans, remove the thyme. Warm the butter in a pan, sauté the onion, add the beans and reserved cooking water, simmer for approx. 5 mins., season.
Apricot sauce
Combine the apricots, mustard, cream and honey, season.
To serve
Remove the ham from the water, remove the bag, cut the ham into slices, plate up with the dried beans and apricot sauce.
