Pear & rosemary switchel

On a hot summer’s day there’s nothing better than a cool, refreshing drink. Sweet-and-sour drinks like kombucha, kefir or shrub are particularly popular, and switchel recently became one of our healthy summer favourites. Switchel – the trendy beverage from the USA – is produced without a starter culture or long fermentation processes. The mixture of apple vinegar, lemon and ginger stimulates the metabolism and digestion, boosts the immune system and provides the body with vitamins and minerals.

Ingredients

for 4 person

Ginger water
1 ⅕ litre water
100 g ginger, cut into slices
2 sprig rosemary
Pear sauce
pears, cut into pieces
lemon, the whole juice
¾ dl agave syrup
¾ dl apple vinegar
Switchel
some  ice cubes
4 sprig rosemary

How it's done

Ginger water

Bring the water, ginger and rosemary to the boil in a pan, reduce the heat, simmer for approx. 2 mins. Remove the pan from the heat, cover and cool.

Pear sauce

Puree the pears and lemon juice in a blender jug. Stir in the agave syrup, vinegar and ginger water, chill for at least 2 hours.

Switchel

Divide the ice cubes between the glasses, pour the switchel into the glasses, decorate with rosemary.
