Pear & rosemary switchel
Ingredients
for 4 person
| 1 ⅕ litre | water |
| 100 g | ginger, cut into slices |
| 2 sprig | rosemary |
| 2 | pears, cut into pieces |
| 1 | lemon, the whole juice |
| ¾ dl | agave syrup |
| ¾ dl | apple vinegar |
| some | ice cubes |
| 4 sprig | rosemary |
How it's done
Ginger water
Bring the water, ginger and rosemary to the boil in a pan, reduce the heat, simmer for approx. 2 mins. Remove the pan from the heat, cover and cool.
Pear sauce
Puree the pears and lemon juice in a blender jug. Stir in the agave syrup, vinegar and ginger water, chill for at least 2 hours.
Switchel
Divide the ice cubes between the glasses, pour the switchel into the glasses, decorate with rosemary.
