Vegan energy bars

I love energy bars – whether on a hike, after playing sport or as a little snack between meals! As most shop-bought bars contain too much sugar for my liking, I have started making my own. It's not difficult to make your own energy bars and you can switch up the ingredients to suit your taste. Chocolate lovers can dip the bars in chocolate and there you have it – the perfect energy boost!

Lara - Vanillacrunnch

Ingredients

for 6 pieces

Energy bar mixture
140 g whole-grain rolled oats
20 g cornflakes, unsweetened
60 g dried apple segments
25 g white almond cream
½ dl rice syrup
25 g cocoa butter
½ tsp cinnamon
1 pinch salt
Chocolate icing
80 g vegan dark chocolate, chopped
1 tsp coconut oil

How it's done

Energy bar mixture

Place the oats in a food processor/blender along with all the other ingredients up to and including the salt, puree until sticky. Transfer the mixture to the prepared tin and press down. Cover and freeze for approx. 1 hr.

Chocolate icing

Melt the chocolate and coconut oil in a thin-sided bowl over a gently simmering bain-marie, stir until smooth. Cut the energy bar mixture into 6 pieces, dip the bars or decorate with the chocolate, leave to dry on a sheet of baking paper.
