Vegan energy bars
Ingredients
for 6 pieces
140 g | whole-grain rolled oats |
20 g | cornflakes, unsweetened |
60 g | dried apple segments |
25 g | white almond cream |
½ dl | rice syrup |
25 g | cocoa butter |
½ tsp | cinnamon |
1 pinch | salt |
80 g | vegan dark chocolate, chopped |
1 tsp | coconut oil |
How it's done
Energy bar mixture
Place the oats in a food processor/blender along with all the other ingredients up to and including the salt, puree until sticky. Transfer the mixture to the prepared tin and press down. Cover and freeze for approx. 1 hr.
Chocolate icing
Melt the chocolate and coconut oil in a thin-sided bowl over a gently simmering bain-marie, stir until smooth. Cut the energy bar mixture into 6 pieces, dip the bars or decorate with the chocolate, leave to dry on a sheet of baking paper.
