Green lentil dal

Ingredients

for 2 person

1 tbsp oil
onion, cut into thin slices
150 g green lentils
120 g frozen leaf spinach, slightly defrosted
1 ½ tbsp curry powder
3 ½ dl water
2 ½ dl coconut milk
120 g frozen leaf spinach, slightly defrosted
¾ tsp salt

How it's done

Heat the oil in a pan. Sauté the onion for approx. 3 mins. Add the lentils, spinach and curry, cook for approx. 2 mins. Pour in the water and coconut milk, simmer for approx. 20 mins., stirring occasionally. Add the spinach, simmer for approx. 5 mins., season with salt.
