Green lentil dal
Ingredients
for 2 person
1 tbsp | oil |
1 | onion, cut into thin slices |
150 g | green lentils |
120 g | frozen leaf spinach, slightly defrosted |
1 ½ tbsp | curry powder |
3 ½ dl | water |
2 ½ dl | coconut milk |
120 g | frozen leaf spinach, slightly defrosted |
¾ tsp | salt |
How it's done
Heat the oil in a pan. Sauté the onion for approx. 3 mins. Add the lentils, spinach and curry, cook for approx. 2 mins. Pour in the water and coconut milk, simmer for approx. 20 mins., stirring occasionally. Add the spinach, simmer for approx. 5 mins., season with salt.
