Pasta with soy sauce and chicken
Ingredients
for 2 person
2 | chicken breasts |
salted water, boiling | |
250 g | whole-grain pasta (e.g. Penne integrale) |
1 tbsp | oil |
200 g | king oyster mushrooms, cut into slices |
1 | onion, finely chopped |
1 | garlic clove, squeezed |
1 dl | soy sauce |
40 g | butter, chilled |
How it's done
Chicken and pasta
Place the chicken into slightly boiling salted water, cover and allow to simmer over a medium heat for approx, 10 minutes. Add the pasta and cook until just al dente. Drain the pasta, retaining approx. 100 ml of the cooking water. Remove the chicken, pull away the meat using two forks.
Sauce
Heat the oil in a non-stick frying pan. Add the mushrooms, fry for approx. 6 mins., turning occasionally. Add the onion and garlic, sauté for approx. 5 mins., remove. Pour the soy sauce and set-aside cooking water into the same pan, bring to the boil. Simmer for approx. 2 mins., turn off the hob, stir in butter in portions. Add the mushrooms, chicken and pasta, mix and heat gently.
