Stuffed courgettes
Ingredients
for 4 person
| 4 | courgettes (each approx. 200 g) |
| 2 tbsp | olive oil |
| 200 g | minced meat (beef and pork) |
| 100 g | feta, roughly crumbled |
| 50 g | hazelnuts, coarsely chopped |
| ½ bunch | peppermint, finely chopped |
| 2 tsp | Dukkah (spice mix) |
| 1 | garlic clove, squeezed |
| ½ tsp | salt |
How it's done
Courgettes
Halve the courgettes lengthwise, remove the flesh with a spoon, finely chop the flesh and place in a bowl. Brush the courgette halves with oil and place in the prepared dish.
Filling
Mix the mince and all the other ingredients up to and including the salt with the chopped courgette. Spoon the filling into the courgette halves.
To bake
Approx. 30 mins. in the centre of an oven preheated to 200°C.
