Couscous with minced meat and plums
Ingredients
for 2 person
| 120 g | couscous |
| 2 dl | water |
| ¼ tsp | salt |
| a little | pepper |
| oil for frying | |
| 6 | plums |
| 1 | onion, finely chopped |
| 300 g | minced meat (beef) |
| 1 tbsp | Dukkah (spice mix) |
| ½ tsp | salt |
| 1 ½ dl | water |
How it's done
Couscous
Empty the couscous into a bowl. Bring the water and salt to the boil, pour over the couscous. Cover and leave to stand for approx. 5 mins. Separate the couscous with a fork, season.
Mince
Heat the oil in a non-stick frying pan. Fry the plums for approx. 1 min. on each side, remove from the pan. Heat a dash of oil in the same pan, briefly sauté the onion. Add the meat, fry while stirring, season. Pour in the water, add the plums, simmer for approx. 5 mins. Plate up the couscous with the mince and plums.
