Courgette salad
Ingredients
for 4 person
| 3 tbsp | white balsamic vinegar |
| 3 tbsp | olive oil |
| ½ tbsp | Dried peppermint leaves, finely crushed |
| ¼ tsp | salt |
| a little | pepper |
| 2 | courgettes, thinly sliced |
| 200 g | mini courgettes |
| 2 tbsp | pine nuts, roasted |
| 4 sprig | oregano, torn into pieces |
How it's done
Dressing
Mix the vinegar, oil and mint in a bowl, season.
Salad
Add the dressing to the courgettes, mix everything together, leave to infuse for approx. 10 mins. Sprinkle the pine nuts and oregano on top.
