Courgette salad

Ingredients

for 4 person

Dressing
3 tbsp white balsamic vinegar
3 tbsp olive oil
½ tbsp Dried peppermint leaves, finely crushed
¼ tsp salt
a little  pepper
Salad
courgettes, thinly sliced
200 g mini courgettes
2 tbsp pine nuts, roasted
4 sprig oregano, torn into pieces

How it's done

Dressing

Mix the vinegar, oil and mint in a bowl, season.

Salad

Add the dressing to the courgettes, mix everything together, leave to infuse for approx. 10 mins. Sprinkle the pine nuts and oregano on top.
