Green power soup
Ingredients
for 4 person
| 1 tbsp | coconut oil |
| 1 | onion, finely chopped |
| 1 | garlic clove, finely chopped |
| 1 cm | ginger, finely chopped |
| 300 g | baby spinach |
| 6 dl | vegetable bouillon |
| 2 dl | coconut milk |
| salt and pepper to taste |
| 50 g | cress |
How it's done
Soup
Heat the oil in a pan. Sauté the onion, garlic and ginger for approx. 3 mins., add the spinach and cook for approx. 2 mins. Pour in the stock and coconut milk, bring to the boil. Reduce the heat, simmer the soup for approx. 10 mins., blend until smooth, season.
To serve
Ladle into soup bowls, garnish with cress.
