Lillet tonic with gooseberries

Ingredients

for 4 person

Gooseberry juice
200 g gooseberries, cut in half
½ dl water
Cocktail
  ice cube
2 dl Lillet
2 ½ dl tonic water
4 sprig peppermint

How it's done

Gooseberry juice

Bring the gooseberries and water to the boil in a pan. Reduce the heat, cover and simmer for approx. 5 mins. Puree the gooseberries and pass through a sieve, leave the juice to cool.

Cocktail

Pour the gooseberry juice and ice cubes into the glasses, add the Lillet and tonic water, garnish with mint.
