Nectarine and cucumber salad with white beans
Ingredients
for 4 person
2 tsp | honey mustard |
3 tbsp | white balsamic vinegar |
3 tbsp | olive oil |
½ tsp | salt |
½ tsp | pepper |
1 | shallot, cut into thin rings |
250 g | mini cucumbers, in dics |
5 | nectarines, cut into wedges |
1 tin | white beans (approx. 400 g, rinsed, drained |
½ bunch | basil, torn into pieces |
50 g | goats' cheese, chips peeled off with a peeler |
2 tbsp | hazelnuts, coarsely chopped, roasted |
How it's done
Dressing
Combine the mustard, balsamic and oil, season. Mix in the shallot and leave to infuse for approx. 15 mins.
Salad
Add the cucumber, nectarines and beans to the dressing, mix. Scatter the basil, cheese and nuts on top.
