Nectarine and cucumber salad with white beans

Ingredients

for 4 person

Dressing
2 tsp honey mustard
3 tbsp white balsamic vinegar
3 tbsp olive oil
½ tsp salt
½ tsp pepper
shallot, cut into thin rings
Salad
250 g mini cucumbers, in dics
nectarines, cut into wedges
1 tin white beans (approx. 400 g, rinsed, drained
½ bunch basil, torn into pieces
50 g goats' cheese, chips peeled off with a peeler
2 tbsp hazelnuts, coarsely chopped, roasted

How it's done

Dressing

Combine the mustard, balsamic and oil, season. Mix in the shallot and leave to infuse for approx. 15 mins.

Salad

Add the cucumber, nectarines and beans to the dressing, mix. Scatter the basil, cheese and nuts on top.
