Rocket and bresaola with cherry sauce

Ingredients

for 2 person

Sauce
150 g cherries, pitted, halved
red onion, cut into thin slices
1 tbsp sugar
1 tbsp red wine vinegar
1 tbsp water
¼ tsp salt
To serve
80 g bresaola, thinly sliced
90 g rocket

How it's done

Sauce

Place the cherries in a small pan along with all the other ingredients, mix and bring to the boil. Reduce the heat, simmer for approx. 10 mins., stirring occasionally, allow the sauce to cool slightly.

To serve

Plate up the bresaola and rocket, drizzle with the sauce.
