Strawberry tart
Ingredients
for 8 pieces
2 ½ dl | milk |
2 tbsp | sugar |
1 tbsp | Maizena cornflour |
1 | egg |
1 | vanilla pod, cut lenghtwise, seeds scratched out |
1 ½ dl | full cream, beaten until stiff |
1 | round sponge |
a little | icing sugar |
250 g | strawberries, quartered |
How it's done
Vanilla custard
In a pan, whisk the milk, sugar, cornflour and egg with the vanilla pod and vanilla seeds. Bring to the boil over a medium heat, stirring constantly. As soon as the mixture thickens and turns creamy, immediately remove the pan from the heat, whisk for a further 2 mins. Pour the custard through a sieve into a bowl. Place a sheet of cling film directly over the top and leave to cool completely, chill for approx. 2 hrs. Stir the custard until smooth, carefully fold in the cream.
Tart
Pour the custard over the base, smooth down. Arrange the berries on top, dust with icing sugar.
