Baked asparagus with basil sauce

Ingredients

for 4 person

Asparagus
2 tbsp white flour
eggs
60 g breadcrumbs
30 g grated Sbrinz
30 g pistachios, finely chopped
1 kg white asparagus, peeled
½ tsp salt
Sauce
250 g cream quark
½ bunch basil, finely chopped
1 tbsp lemon juice
1 tbsp maple syrup
¼ tsp salt
a little  pepper

How it's done

Asparagus

Empty the flour into a shallow dish. Beat the eggs in a deep dish, mix the breadcrumbs, cheese and pistachios in a shallow dish. Toss the asparagus in the flour in batches, shaking off the excess flour. Dip the asparagus in the eggs, then coat in the mixture of breadcrumbs, cheese and pistachios. Place on a baking tray lined with baking paper.

To bake

Approx. 15 mins. in the centre of an oven preheated to 220°C.

Sauce

Combine the quark with the basil, lemon juice and maple syrup, season. Serve the asparagus with the sauce.
