Vegetables for breakfast? Sounds like an acquired taste at first, but it's actually delicious! This breakfast trend involves adding grated zucchini to your favourite porridge. One of your five a day!

Lara - Vanillacrunnch

Ingredients

for 4 person

Porridge
6 dl oat drink
1 ½  courgettes, finely grated
160 g fine whole-grain rolled oats
50 g cocoa powder
40 g ground hazelnuts
2 tsp crushed linseed
4 tsp white almond cream
4 tbsp maple syrup
2 tsp cinnamon
Topping
20 g dark chocolate, coarsely chopped
½  courgette, coarsely grated

How it's done

Porridge

Bring the oat drink to the boil along with all the other ingredients up to and including the linseed, simmer the porridge for approx. 5 mins., stirring occasionally. Remove the pan from the heat, leave to infuse for approx. 2 mins. Mix in the almond butter, maple syrup and cinnamon. Divide the porridge between bowls.

Topping

Add the chocolate and zucchini to the warm porridge, serve immediately.
