Pasta salad with cucumber and chicken
Ingredients
for 4 person
250 g | pasta |
250 g | green beans, cut in half |
salted water, boiling |
1 tbsp | olive oil |
300 g | mince (chicken) |
2 tsp | Dukkah (spice mix) |
¼ tsp | salt |
500 g | cauliflower, cut into small florets |
½ tsp | salt |
1 tbsp | mild mustard |
4 tbsp | white balsamic vinegar |
6 tbsp | olive oil |
3 tbsp | plain yoghurt |
salt and pepper to taste | |
250 g | mini cucumber, cut into wedges |
15 g | Micro greens (e.g. mild) |
How it's done
Pasta and beans
Following the packet instructions, cook the pasta and beans in boiling salted water until al dente. Rinse in cold water, drain, place in a bowl.
To fry the chicken
Heat the oil in a non-stick frying pan. Fry the mince for approx. 7 mins., stirring occasionally, season, remove from the pan. Stir fry the cauliflower in the same pan for approx. 10 mins., season with salt.
Salad
Whisk together the mustard, balsamic, oil and yoghurt in a bowl, season. Add the pasta, beans, chicken and cucumber, mix. Top with the micro greens and cauliflower.
