Courgette and paneer skewers

Ingredients

for 4 person

Skewers
courgettes, cut lengthwise into slices approx. 2 mm thick
1 tbsp olive oil
½ tsp salt
400 g paneer, cut into approx. 3 cm cubes
wooden skewers
Sauce
2 tbsp lemon juice
3 tbsp olive oil
¼ tsp salt
¼ tsp pepper
4 sprig oregano, finely chopped
4 tbsp pine nuts, roasted

How it's done

Skewers

Mix the courgette slices with the oil and salt, leave to absorb for approx. 15 mins. Thread the courgette onto the skewers in a wavy design along with the paneer.

Sauce

Whisk together the lemon juice and oil, season. Stir in the oregano and pine nuts.

Charcoal/gas/electric grill

Cover the skewers and grill over/on a medium heat (approx. 200 °C for approx. 4 mins. on each side. Plate up the skewers, drizzle with the sauce.
