Courgette and paneer skewers
Ingredients
for 4 person
| 2 | courgettes, cut lengthwise into slices approx. 2 mm thick |
| 1 tbsp | olive oil |
| ½ tsp | salt |
| 400 g | paneer, cut into approx. 3 cm cubes |
| 6 | wooden skewers |
| 2 tbsp | lemon juice |
| 3 tbsp | olive oil |
| ¼ tsp | salt |
| ¼ tsp | pepper |
| 4 sprig | oregano, finely chopped |
| 4 tbsp | pine nuts, roasted |
How it's done
Skewers
Mix the courgette slices with the oil and salt, leave to absorb for approx. 15 mins. Thread the courgette onto the skewers in a wavy design along with the paneer.
Sauce
Whisk together the lemon juice and oil, season. Stir in the oregano and pine nuts.
Charcoal/gas/electric grill
Cover the skewers and grill over/on a medium heat (approx. 200 °C for approx. 4 mins. on each side. Plate up the skewers, drizzle with the sauce.
