Roasted aubergine with yoghurt
Ingredients
for 2 person
| oil, for frying | |
| 2 | aubergine, cut into cubes |
| 500 g | cherry tomato, cut in half |
| 1 tsp | salt |
| a little | pepper |
| 90 g | plain yoghurt |
| ½ bunch | dill, finely chopped |
| ¼ tsp | salt |
| a little | pepper |
How it's done
Aubergines
Heat the oil in a frying pan. Fry the aubergines for approx. 10 mins., add the tomatoes, season, cover and simmer for approx. 15 mins.
To serve
Mix the yoghurt and dill, season, serve with the aubergines.
