Kale salad with pears and walnuts

Crunchy kale is packed with vitamins and minerals, and keeps our immune system in good shape during the winter. The pears and nuts make a wonderfully sweet addition and add the perfect finishing touch to this quick salad.

Ingredients

for 4 person

Caramelized nuts
150 g walnut kernels
3 tbsp maple syrup or honey
1 tbsp water
Salad
lemon *-*
4 tbsp olive oil
  salt, to taste
600 g washed, prepared kale, cut into pieces
pears, cut into cubes
200 g feta, crumbled

How it's done

Caramelized nuts

Heat the nuts in a frying pan with the maple syrup and water, stirring constantly until the nuts have caramelized. Transfer to a sheet of baking paper, leave to cool.

Salad

Combine the lemon juice and oil in a bowl, season with salt. Add the kale and pears. Plate up the salad, top with the feta, sprinkle with the nuts.
