Grilled corn on the cob with coriander salsa
Ingredients
for 4 person
| 1 | organic lime *-* |
| 2 tbsp | olive oil |
| ½ bunch | coriander, roughly chopped |
| salt and pepper to taste |
| ½ tsp | chilli flakes |
| ¼ tsp | ground cumin |
| ½ tbsp | dried oregano |
| ¼ tsp | garlic powder |
| 2 tbsp | olive oil |
| 4 | corn cob |
| 4 piece | aluminium foil |
| 100 g | feta, finely crumbled |
How it's done
Coriander salsa
Mix the lime zest and juice with the oil and coriander, season.
Corn on the cob
Mix the spices, combine half with the oil, set aside the remainder of the spice mix. Pull the leaves of the corn cobs downwards and remove the fibres. Brush the corn cobs with the seasoned oil and wrap individually in foil.
Charcoal/gas/electric grill
Grill the corn cobs over/on a low heat (approx. 180 °C for approx. 45 mins.
Cheese
Mix the feta with the rest of the spice mix. Toss the hot corn cobs in the cheese, serve with the coriander salsa.
