Winter chicory salad with cashew lime dressing

I have to admit, I disliked winter chicory for a long time. But then I realised that if you combine it with the right dressing and a handful of ingredients that offset the bitterness, you can create a truly delicious salad. In this recipe, I have gone for apples and beetroot, which give the salad a wonderfully sweet taste. I've also added croutons. These give the salad added texture and go beautifully with the cashew lime dressing.

Ingredients

for 4 person

Croutons
2 tbsp olive oil
200 g bread, cut into cubes
Salad
winter chicory, cut into strips
apples, cut into cubes
300 g raw beetroots, coarsely grated
1 dl salad dressing (e.g. Karma Cashew Lime Dressing)

How it's done

Croutons

Heat the oil in a pan, fry the cubes of bread on all sides until crispy. Remove and leave to cool.

Salad

Mix the winter chicory, apples and beetroot in a large bowl. Add the dressing, mix, top with the croutons.
