Sea bass with barba di frate
Ingredients
for 4 person
2 tbsp | olive oil |
6 | dried tomatoes in oil, drained, finely chopped |
1 | garlic clove, thinly sliced |
300 g | agretti |
1 | organic lemon, a little grated zest and 1½ tbsp of juice set aside |
½ tsp | salt |
a little | pepper |
oil for frying | |
500 g | fillet of sea bass |
½ tsp | salt |
a little | pepper |
How it's done
Agretti
Heat the oil in a frying pan. Briefly sauté the tomatoes and garlic. Add the agretti in batches, cover and cook for approx. 5 mins., stirring occasionally. Add the lemon zest, season.
Sea bass
Heat the oil in a non-stick frying pan. Season the fish, place in the pan (skin side down) in batches, fry for approx. 2 mins. Turn the fillets and fry for approx. 1 min., drizzle with the reserved lemon juice, serve with the agretti.
