Sea bass with barba di frate

Ingredients

for 4 person

Agretti
2 tbsp olive oil
dried tomatoes in oil, drained, finely chopped
garlic clove, thinly sliced
300 g agretti
organic lemon, a little grated zest and 1½ tbsp of juice set aside
½ tsp salt
a little  pepper
Sea bass
  oil for frying
500 g fillet of sea bass
½ tsp salt
a little  pepper

How it's done

Agretti

Heat the oil in a frying pan. Briefly sauté the tomatoes and garlic. Add the agretti in batches, cover and cook for approx. 5 mins., stirring occasionally. Add the lemon zest, season.

Sea bass

Heat the oil in a non-stick frying pan. Season the fish, place in the pan (skin side down) in batches, fry for approx. 2 mins. Turn the fillets and fry for approx. 1 min., drizzle with the reserved lemon juice, serve with the agretti.
