Coriander and lime rice
Ingredients
for 2 person
1 tbsp | olive oil |
1 | onion, finely chopped |
250 g | basmati rice (e.g. Uncle Ben's Express) |
1 | lime, grated zest set aside, use all of the juice |
1 bunch | coriander, finely chopped |
¼ tsp | chilli flakes |
¼ tsp | salt |
How it's done
Coriander and lime rice
Heat the oil in a pan. Sauté the onion. Add the rice and cook briefly. Add the lime juice, cover and cook for a further 3 mins. Mix in the coriander and the reserved lime zest, season.
