Coriander and lime rice
1 tbsp olive oil
onion, finely chopped
250 g basmati rice (e.g. Uncle Ben's Express)
lime, grated zest set aside, use all of the juice
1 bunch coriander, finely chopped
¼ tsp chilli flakes
¼ tsp salt

How it's done

Coriander and lime rice

Heat the oil in a pan. Sauté the onion. Add the rice and cook briefly. Add the lime juice, cover and cook for a further 3 mins. Mix in the coriander and the reserved lime zest, season.
