Roast chicken with orange

Ingredients

for 4 person

Chicken
chickens (each approx. 750 g)
3 tbsp toasted sesame oil
2 tbsp soy sauce
2 tsp lemon juice
½ tsp ground coriander seeds
¼ tsp cayenne pepper
1 tsp salt
To roast in the oven
oranges (e.g. blood oranges or blond oranges)
red chilli pepper, deseeded, sliced

How it's done

Chicken

Cut each chicken into 8 pieces. Combine the oil with all the other ingredients up to and including the salt, brush the chicken with the mixture, place in a roasting tin.

To roast in the oven

Approx. 20 mins. in the centre of an oven preheated to 220°C. Meanwhile, slice off the top and bottom of the oranges, then peel all round the fruit down to the flesh. Cut the oranges in half and cut into slices. Remove the roasting tin from the oven, place the oranges and chilli pepper around and on top of the chicken, roast for a further 20 mins.
