Veal cutlets with mustard soy sauce

Ingredients

for 2 person

Meat
veal cutlets (each approx. 200 g)
½ tsp salt
a little  pepper
  clarified butter for frying
Sauce
4 tbsp water
2 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp mild mustard

How it's done

Meat

Season the meat, heat the clarified butter in a frying pan. Fry the cutlets for approx. 2 mins. on each side, cover and leave to rest for approx. 5 mins.

Sauce

Add the water, soy sauce, vinegar and mustard to the same pan, loosen any bits that have stuck to the bottom, simmer the sauce over a low heat for approx. 2 mins., stirring constantly. Serve the meat with the sauce.
