Chicken with bay leaf and garlic (adobo)

Ingredients

for 4 person

To fry the chicken
1 tbsp oil for frying
chicken thighs
¼ tsp salt
a little  pepper
Adobo
1 dl water
¾ dl soy sauce
½ dl white wine vinegar
1 ½ tbsp lemon juice
1 ½ tbsp sugar
garlic cloves, crushed
bay leaves
1 ½ tsp peppercorns, coarsely crushed

How it's done

To fry the chicken

Heat the oil in a non-stick pan. Season the chicken, fry (skin side down) for approx. 7 mins., turn and fry for a further 3 mins. If necessary, drain off some of the cooking fat.

Adobo

Combine the water, soy sauce, vinegar, lemon juice and sugar, pour into the pan and bring to the boil. Add the garlic, bay leaf and pepper, reduce the heat, cover and braise for approx. 30 mins. Remove the lid and reduce for approx. 10 mins.
