Lamb's lettuce salad with salsify
Ingredients
for 4 person
| 500 g | salsify, peeled, cut into sticks approx. 8 cm long |
| salted water, boiling | |
| 140 g | bacon strips |
| 1 tsp | mustard |
| 2 tbsp | apple vinegar |
| 1 tbsp | olive oil |
| 3 tbsp | plain yoghurt |
| ½ tsp | salt |
| a little | pepper |
| 130 g | lambs' lettuce |
| 1 | red-skinned apple, diced |
| 1 tbsp | pumpkin seeds, toasted, coarsely chopped |
How it's done
Salsify
Simmer the salsify in boiling salted water for approx. 15 mins., drain. Wrap the salsify in bacon, fry for approx. 5 mins. all over in a non-stick frying pan.
Salad
Combine the mustard, vinegar, oil and yoghurt, season. Add the salad, mix, serve with the salsify. Scatter the apple and pumpkin seeds on top.
