Lamb's lettuce salad with salsify

Ingredients

for 4 person

Salsify
500 g salsify, peeled, cut into sticks approx. 8 cm long
  salted water, boiling
140 g bacon strips
Salad
1 tsp mustard
2 tbsp apple vinegar
1 tbsp olive oil
3 tbsp plain yoghurt
½ tsp salt
a little  pepper
130 g lambs' lettuce
red-skinned apple, diced
1 tbsp pumpkin seeds, toasted, coarsely chopped

How it's done

Salsify

Simmer the salsify in boiling salted water for approx. 15 mins., drain. Wrap the salsify in bacon, fry for approx. 5 mins. all over in a non-stick frying pan.

Salad

Combine the mustard, vinegar, oil and yoghurt, season. Add the salad, mix, serve with the salsify. Scatter the apple and pumpkin seeds on top.
