Curly endive salad with potatoes and leek

Ingredients

for 4 person

Vegetables
1 kg waxy potatoes, cooked in their skins (day-old), cut into approx. 2 cm pieces
leek, cut into approx. 1 cm pieces
garlic cloves, pressed
3 tbsp olive oil
¾ tsp salt
Salad
1 tbsp honey mustard
2 tbsp white balsamic vinegar
2 tbsp olive oil
½ tsp salt
a little  pepper
220  endive salad

How it's done

Vegetables

Mix the potatoes, leek and garlic with the oil, season with salt.

To roast

Approx. 20 mins. in the upper half of an oven preheated to 220°C.

Salad

Whisk together the mustard, balsamic and oil in a bowl, season. Add the salad, mix, serve with the potatoes and leek.
