Baked sweet potatoes with fried egg and bacon
Ingredients
for 4 person
1 kg | sweet potato |
1 tbsp | olive oil |
1 tsp | sea salt |
8 slice | bacon (approx. 100 g) |
8 | fresh egg |
1 | spring onion, cut into rings |
How it's done
Sweet potatoes
Prick the sweet potatoes 3 times with a fork, brush with oil, season with salt, place on a baking tray lined with baking paper.
To bake
Approx. 45 mins. in the centre of an oven preheated to 220°C. Remove from the oven, slice the potatoes down the middle, push apart slightly. Make a hollow with a tablespoon, place a rasher of bacon inside each and carefully add 1 egg.
Finish cooking
Approx. 10 mins. in the centre of the oven. Garnish with the spring onions.
