Baked sweet potatoes
Ingredients
for 4 person
| 1 kg | sweet potato (approx. 8) |
| 1 tbsp | olive oil |
| 1 tsp | sea salt |
| 2 tbsp | white flour |
| ¼ tsp | paprika |
| ½ tsp | salt |
| 300 g | onion, cut into thin rings |
| 4 tbsp | clarified butter |
| 200 g | crème fraîche |
| 1 bunch | chives, finely chopped |
| ¼ tsp | salt |
| a little | pepper |
| a little | paprika |
How it's done
Sweet potatoes
Prick the sweet potatoes 3 times with a fork, brush with oil, season with salt, place on a baking tray lined with baking paper.
To bake
Approx. 45 mins. in the centre of an oven preheated to 220°C.
Fried onions
Mix the flour, paprika and salt, toss the onion rings in the mixture in batches. Heat the clarified butter in a frying pan. Fry the onion rings in two batches for approx. 10 mins. each until golden brown. Remove and drain on paper towels.
Sauce
Combine the crème fraîche and chives, season. Remove the potatoes from the oven, slice down the middle, push apart slightly, fill with crème fraîche. Top with the onion rings, sprinkle with paprika.
