Chicken with bacon and yoghurt dressing

Ingredients

for 4 person

Bacon and yoghurt dressing
100 g bacon in rashers
1 tsp coarse-grain mustard
2 tbsp cider vinegar
2 tbsp olive oil
2 tbsp plain yoghurt
  salt and pepper to taste
Chicken
chicken thigh
½ tsp salt
a little  pepper
Salad
150 g lambs' lettuce

How it's done

Bacon and yoghurt dressing

Fry the bacon in a frying pan until crispy, without adding any oil. Remove and drain on paper towels. Cut the bacon into pieces. Combine the mustard, vinegar, oil and yoghurt, season, mix in the bacon.

Chicken

Season the pieces of chicken, fry (skin side down) in the same pan over a medium heat for approx. 15 mins. until crispy. Turn the chicken and cook for a further 15 mins.

Salad

Serve the salad with the chicken, drizzle the dressing over the top.
