Apple pancakes
Ingredients
for 12 pieces
3 | eggs |
50 g | sugar |
1 parcel | vanilla sugar |
¼ tsp | salt |
175 g | white flour |
1 ½ tsp | baking powder |
1 ½ dl | milk |
2 | apples, cut into approx. 1 cm slices |
2 tsp | lemon juice |
clarified butter | |
3 tbsp | sugar |
1 tsp | cinnamon |
How it's done
Batter
Using the whisk on a hand mixer, beat the eggs, sugar, vanilla sugar and salt for approx. 3 mins. until light and fluffy. Mix the flour and baking powder, stir into the egg mixture along with the milk, cover and leave to stand at room temperature for approx. 30 mins.
Pancakes
Mix the apples and lemon juice in a bowl. Heat a little clarified butter in a non-stick frying pan. Reduce the heat. Pour as much batter into the pan as it takes to make pancakes of approx. 10 cm in diameter, place a slice of apple on top of each. Cook for approx. 1½ mins. until the underside separates from the pan, toss the pancake, cook for approx. 1 min., cover and keep warm. Prepare the remaining pancakes in the same way. Mix the sugar and cinnamon, sprinkle on top of the pancakes.
