Tagliatelle with sausage carbonara
Ingredients
for 2 person
½ tbsp | olive oil |
2 | pork bratwurst, insides removed |
200 g | pasta (e.g. tagliatelle) |
salted water, boiling |
2 | fresh egg, beaten |
50 g | grated Parmesan |
¼ tsp | salt |
¼ tsp | pepper |
How it's done
Meat
With wet hands, shape the sausage meat into walnut-sized balls. Heat the oil in a pan, fry the meatballs for approx. 6 mins.
Tagliatelle
Cook the tagliatelle in salted water until al dente, drain and reserve approx. 50 ml of the cooking water.
Sauce
Mix the eggs, cheese and a little cooking water in a bowl, season. Add the hot tagliatelle and the remainder of the cooking water, mix together, mix in the meatballs.
