Croque madame
Ingredients
for 4 person
1 ½ tbsp | butter |
1 ½ tbsp | white flour |
3 dl | milk |
2 pinch | nutmeg |
½ tsp | salt |
a little | pepper |
8 slice | whole-grain toast bread |
50 g | butter |
4 slice | ham |
200 g | semi-hard cheese (e.g. le Vully), coarsely grated |
½ | apple, coarsely grated |
a little | pepper |
½ tbsp | butter |
4 | eggs |
salt and pepper to taste |
How it's done
Béchamel sauce
Heat the butter in a pan. Add the flour, cook briefly; the flour must not take on any colour. Pour in the milk all at once, bring to the boil while stirring, reduce the heat and simmer for approx. 5 mins., season and allow to cool slightly.
Cheese & ham toastie
Spread a thin layer of butter on one side of each slice of toast bread. Spread half of the béchamel sauce on the buttered side of 4 of these slices. Add the ham, top with half of the cheese and the apple. Place the remaining slices of toast bread on top, press down gently, transfer to a baking tray lined with baking paper. Top with the remainder of the béchamel sauce and cheese, then season.
To bake
Approx. 10 mins. in the centre of an oven preheated to 220°C.
Fried eggs
Heat the butter in a non-stick frying pan. Slide the eggs carefully into the frying pan one at a time, then fry over a low heat until the egg whites are set but the yolks are still runny, season. Place the eggs on top of the cheese & ham toasties, serve hot.
