Beans in basil & tomato sauce is a dish that I love to cook in summer, however it's a tasty option in the colder months, too. I make this dish a lot as it tastes great any time of the day. Whether you have it as a side dish or on toast as a hearty breakfast, it's simply delicious.

Ingredients

for 4 person

1 tbsp olive oil
red onion, finely chopped
garlic cloves, finely chopped
1 tsp rosemary, finely chopped
2 tbsp tomato puree
2 tin chopped tomatoes (each approx. 250 g)
1 tbsp basil, finely chopped
2 tbsp crema di Balsamico (balsamic cream)
2 tin white beans (each approx. 250 g), rinsed, drained
1 ½ dl water
1 tsp salt
a little  pepper

How it's done

Heat the oil in a pan. Sauté the onion, garlic and rosemary. Add the tomato puree and cook briefly. Add the tomatoes and all of the other ingredients up to and including the water, simmer for approx. 20 mins., season. Plate up the beans, garnish with basil.
