Stuffed avocados
Ingredients
for 4 person
| 2 | avocado |
| 50 g | smoked salmon (e.g. Fine Food Swiss salmon), thinly sliced |
| 90 g | salmon fillet (sushi quality), diced |
| 1 | organic lime, ½ grated zest set aside, use all of the juice |
| 1 ½ tbsp | soy sauce (e.g. Fine Food Marushima Soyu) |
| 3 tbsp | crème fraîche |
| ½ | apple, finely grated |
| 2 tbsp | wasabi nut (e.g. Fine Food wasabi-coated peanuts), coarsely chopped |
| 1 | nori sheet, thinly sliced |
How it's done
Filling
Halve the avocados, remove the stone, separate the flesh from the skin using a tablespoon. Set aside the avocado skins. Dice the flesh, mix carefully with the salmon, lime juice and soy sauce.
To serve
Mix the crème fraîche, apple and reserved lime zest. Spoon half of the apple mixture into the avocado skins. Top with the salmon filling, add the remainder of the apple mixture. Garnish with the nuts and strips of nori.
