Spiced port and tonic
Ingredients
for 4 person
| 3 dl | water |
| 300 g | cane sugar |
| 1 | pear, diced |
| 1 sprig | thyme |
| 8 corn | Tasmanian pepper, crushed |
| 1 | clove |
| 8 | ice cubes |
| 2 dl | white port |
| 2 dl | tonic water |
| 1 dl | sparkling mineral water |
| 1 | lime, use only the juice |
How it's done
Spiced pear syrup
Bring the water and sugar to the boil in a pan. Add the pear, thyme and spices, simmer for approx. 10 mins., leave to cool. Bring the syrup to the boil once more, strain, pour into a clean, warm bottle, seal immediately.
Port and tonic
Place the ice cubes in the glasses. Add the port and 1 tbsp of syrup to each glass. Pour in the tonic, mineral water and lime juice.
