Chicken breasts with oranges and dates

Ingredients

for 4 person

Chicken breasts
2 tbsp toasted sesame oil
1 tbsp soy sauce
1 tsp lemon juice
½ tsp paprika
½ tsp ground coriander seeds
¼ tsp cayenne pepper
½ tsp salt
chicken breasts (each approx. 170 g)
Oranges
orange
50 g pitted date, sliced lengthwise
1 tbsp shelled pistachios, coarsely chopped

How it's done

Chicken breasts

Combine the oil with the remaining ingredients and a little salt. Coat the chicken breasts with the mixture.

Oranges

Slice off the top and bottom of the oranges, then peel all round the fruit down to the flesh. Cut the oranges into slices, arrange in the roasting tin. Add the chicken breasts. Scatter the dates and pistachios over the top.

Roast for approx. 25 mins. in the centre of an oven preheated to 200°C.

Carve the chicken breasts and serve with the oranges.
