Pears poached in red wine with ham sauce
Ingredients
for 4 person
| 4 | pear, peeled, halved, cored |
| 2 tsp | lemon juice |
| 5 dl | red wine |
| 3 tbsp | sugar |
| 2 | star anise |
| 200 g | sour single cream |
| 100 g | ham in slices, finely chopped |
| 2 tbsp | flat-leaf parsley, finely chopped |
| 1 tbsp | chives, finely chopped |
| ¼ tsp | salt |
| a little | pepper |
How it's done
To poach the pears
Brush the pears with the lemon juice. Bring the wine to the boil in a pan along with the sugar and star anise. Add the pears, simmer over a low heat for approx. 5 mins. until just soft, turning once. Cover the pears and leave to cool in the poaching liquid.
Ham sauce
Mix the sour single cream, ham and herbs, season, serve with the pears.
