Watermelon and cucumber salad with cured ham

Nothing is more refreshing in extremely hot temperatures than chilled watermelon. The combination with cured ham may sound a little unusual but the spicy note and hot lemon chili dressing create a wonderful contrast to the sweet melon. This is a light and refreshing summer salad.

Ingredients

for 4 person

Dressing
1 dl olive oil
½  organic lemon grated zest and juice
½ tsp allspice (d'Espelette)
  salt and pepper to taste
Salad
1 kg watermelon, cut into slices approx. 1 cm thick, in triangles
cucumber, halved lengthways, diagonally sliced
5 sprig basil, leaves torn off
5 sprig peppermint, leaves removed, coarsely chopped
8 slice cured ham
4 tbsp pumpkin seeds, lightly roasted

How it's done

Dressing

Mix oil with lemon zest, juice and pimento, season, set aside.

Salad

Mix melon, cucumber and herbs in a bowl. Place ham on plates, garnish with salad. Drizzle with prepared dressing, sprinkle with pumpkin seeds.
