Watermelon and cucumber salad with cured ham
Ingredients
for 4 person
1 dl | olive oil |
½ | organic lemon grated zest and juice |
½ tsp | allspice (d'Espelette) |
salt and pepper to taste |
1 kg | watermelon, cut into slices approx. 1 cm thick, in triangles |
1 | cucumber, halved lengthways, diagonally sliced |
5 sprig | basil, leaves torn off |
5 sprig | peppermint, leaves removed, coarsely chopped |
8 slice | cured ham |
4 tbsp | pumpkin seeds, lightly roasted |
How it's done
Dressing
Mix oil with lemon zest, juice and pimento, season, set aside.
Salad
Mix melon, cucumber and herbs in a bowl. Place ham on plates, garnish with salad. Drizzle with prepared dressing, sprinkle with pumpkin seeds.
