Spice mix for raclette
Ingredients

1 tbsp | oregano leaves, finely chopped |
2 tbsp | basil leaf, finely chopped |
2 | dried tomatoes, finely chopped |
¼ tsp | caraway seeds, crushed |
2 tbsp | walnut kernel |
4 | dried apple ring, finely chopped |
¼ tsp | chilli flakes |
¼ tsp | allspice (e.g. Fine Food Jamaica Piment) |
2 tbsp | fried onions, finely chopped |
1 tsp | rosemary needles, finely chopped |
½ tsp | garlic powder |
¼ tsp | smoked paprika |
1 tsp | fennel seeds |
½ tbsp | curry powder (e.g. Fine Food Sri Lanka Curry) |
1 tbsp | smoked almond, finely chopped |
1 | pineapple slices, dried, finely chopped |
How it's done
Mediterranean mix
Mix the herbs with the tomatoes and caraway seeds.
Fruity-nut mix
Dry roast the walnut kernels in a frying pan, remove and chop finely. Mix the walnut kernels with the apple rings, chilli flakes and chilli pepper.
“Stinker” mix
Mix the fried onions, rosemary, garlic powder and paprika.
Curry mix
Roast the fennel seeds in a frying pan without any oil. Crush the fennel seeds using a mortar and pestle, mix with the curry, smoked almonds and pineapple.
