Roll with carrot, apple and hazelnuts
Ingredients
for 12 pieces
| 475 g | half-white flour |
| 200 g | carrots, coarsely grated |
| 100 g | dried apple segments, finely chopped |
| 100 g | fine whole-grain rolled oats |
| 50 g | hazelnuts, coarsely chopped |
| 1 ½ tsp | salt |
| ½ cube | yeast (approx. 20 g, crumbled |
| 3 dl | water |
| 2 tsp | liquid honey |
| 1 tbsp | water |
| 1 tbsp | fine whole-grain rolled oats |
How it's done
Dough
Mix the flour with all the other ingredients up to and including the yeast. Pour in the water and honey. Knead the dough for approx. 5 mins. using the dough hook on a food processor. Cover and leave to rise at room temperature for approx. 1 hr.
To shape
Divide the dough into 12 portions, shape into round rolls, place on a sheet of baking paper, cover and leave to rise for approx. 1 hr. Brush the rolls with water, sprinkle with the rolled oats.
To bake
Place the baking tray in the lower half of the oven, preheat the oven to 240°C. Slide the baking paper and rolls carefully onto the hot baking tray. Turn the oven down to 220°C. Bake for approx. 25 mins. in the lower half of the oven. Remove from the oven, leave to cool on a cooling rack.
