Choco chia pudding trifle

Chia pudding is a very popular dessert these days – and rightly so! These little seeds are packed with energy-boosting nutrients. But how can we make chia pudding even better than it already is? Easy. We puree it! When you mix chia pudding with cocoa powder and a pinch of coffee, the result is a delicious cream that can be layered in a jar with coconut yoghurt, granola and fruit. Et voilà, the perfect healthy dessert or breakfast.

Ingredients

for 4 person

Chia pudding
50 g chia seeds
2 ½ dl oat drink or almond milk
1 tbsp coconut palm sugar
20 g cocoa powder
¾ dl coconut milk
½ tsp instant coffee
To assemble
150 g coconut milk yoghurt
4 tbsp Granola
150 g mixed berries

How it's done

Chia pudding

Combine the chia seeds and oat milk in a bowl, leave to absorb for approx. 5 mins., then stir until smooth. Puree the chia seed mixture in a blender along with all the other ingredients up to and including the coffee powder. Pour into a bowl, cover and chill for approx. 1 hr.

To assemble

Spoon the chia pudding, yoghurt, granola and berries into the jars in alternate layers.
