Use any opportunity to savour strawberry season with this quick and easy strawberry strudel. Whether guests turn up unannounced, your aunt pops by for a cup of tea or you simply want to treat the kids, this mini strawberry strudel is sure to hit the mark.

Ingredients

for 6 pieces

Strudel
puff pastry dough, rolled into a rectangle
100 g cream cheese
250 g strawberry, sliced
egg, beaten
To bake
a little  icing sugar

How it's done

Strudel

Halve the pastry crosswise, cut into 6 equal rectangles. Score approx. 1.5 cm strips at the side edges, leaving a strip approx. 3 cm wide in the middle. Spread cream cheese over the middle strip, place the strawberries on top so that they overlap slightly. Fold the lower pastry edge inwards, then fold the side strips inwards over the strawberries (left and right alternately), finally fold the upper edge inwards. Brush the strudel with egg.

To bake

Approx. 15 mins. in the centre of an oven preheated to 220°C. Remove from the oven, allow to cool slightly, then dust with icing sugar.
