Grilled peach & bread salad
Ingredients

1 | garlic clove |
2 tbsp | olive oil |
¼ tsp | salt |
4 slice | bread (approx. 150 g |
4 | peaches |
1 bunch | basil |
3 tbsp | olive oil |
2 tbsp | lemon juice |
½ tsp | salt |
a little | pepper |
1 | red chilli pepper |
1 | Mozzarella di bufala (buffalo mozzarella) (approx. 150 g |
How it's done
Bread and peach
Press the garlic, mix together with the oil and salt. Spread the mixture on top of the bread slices.
Cut the peach into segments.
Charcoal/gas/electric grill:
Grill the bread and peach over/on a medium heat (approx. 220 °C for approx. 5 mins. on each side.
Dressing
Roughly chop the basil, puree with the oil and lemon juice, season.
Salad
Cut the slices of toast into cubes.
Deseed and finely chop the chilli pepper, plate up along with the croutons and peach slices. Top with chunks of mozzarella, drizzle the dressing on top.
