Tomato quiche
Ingredients
for 4 person
| 200 g | plain cottage cheese |
| 2 | eggs |
| 4 sprig | thyme, leaves torn off |
| ½ tsp | salt |
| a little | pepper |
| 1 | pastry dough, rolled into a circle (approx. 32 cm in diameter) |
| 500 g | tomatoes (e.g. cherry tomatoes, Peretti), halved or sliced |
| 1 tbsp | olive oil |
| 2 sprig | thyme, torn |
| ½ tsp | sea salt |
| a little | pepper |
How it's done
Sauce
Mix the cottage cheese with the eggs and thyme, season.
Quiche
Roll out the dough and place in the tin with the baking paper. Prick the base firmly with a fork. Pour the mixture over the pastry base. Arrange the tomatoes on top, drizzle with oil, garnish with thyme, season.
To bake
Approx. 45 mins. on the bottom shelf of an oven preheated to 220°C.
