Courgette gnocchi
Ingredients
for 2 person
| ½ tbsp | oil for frying |
| 1 | courgette, cut into approx. 5 mm slices |
| 300 g | gnocchi |
| 100 g | baby spinach |
| 2 tbsp | pine nuts |
| 30 g | butter |
How it's done
Heat the oil in a non-stick frying pan. Fry the courgette for approx. 10 mins., turning occasionally, then remove. Fry the gnocchi in the same pan for approx. 5 mins., add the spinach, pine nuts and courgette, cook for approx. 5 mins., then plate up. Melt the butter in the same pan until it turns frothy and tastes nutty, drizzle over the gnocchi.
